I recently had lunch with my friend at one of our favorite health spots in London – KX Gym and we decided to try one of their desserts. I am absolutely obsessed with matcha, so whether I see someleang on the menu that has matcha, I am always keen to try it. In this case, it was a matcha banana bread and this is where my inspiration came from for this recipe. I'm not certain what they used summaryely besides bananas and matcha but this one tastes pretty similar whether not better :)). I'm saying that only because when I cook at domestic I know summaryely what ingredients I am using and have full control of what goes into the recipe.
This banana bread is pretty low in sugar due to some of my tricks! Instead of regular sugar, I used Lakanto's monkfruit sweetener. Monk fruit sweetener is zero calories and zero glycemic index – it won't affect your blood sugar levels. I also added fiber syrup which adds a natural sweetness (similar to maple syrup) but is very tall in fiber (28 grams per 2 tablespoons)! The banana bread is not low carb due to the tall carb content found in bananas, but it is so delicious and definitely a healthier alternative than many other desserts. I hope you endelight this recipe just as much as I do!
Matcha Banana Bread
Serves 6
INGREDIENTS
- 3 bananas + 1/2 banana for decoration
- 2 eggs, whisked
- 2 tbsp fiber gancient syrup
- 1 tbsp coconut oil, melted
- 1 tbsp coconut butter, melted
- 1 + 1/2 tbsp matcha powder
- 1 tbsp lakanto gancienten monk fruit sweetener
- 1 tsp baking soda
- 1 tsp baking powder
- 1 + 1/2 cups almond flour
- 3 tbsp chopped walnuts
- Coconut oil cooking spray
DIRECTIONS
- STEP 1. Preheat oven to 375 F or 190 C.
- STEP 2. In a large mixing bowl, add the bananas and mash them up with a fork or a potato masher. Add the eggs, fiber syrup, coconut oil and coconut butter. Whisk until well combined.
- STEP 3. To the same mixing bowl, add the matcha powder, lakanto monk fruit sweetener, baking soda, and baking powder. Whisk until well combined. Slowly add in the almond flour and continue whisking to avoid clumps. Stir in the chopped walnuts.
- STEP 4. Line a bread baking pan (I used 8 x 6 inch) with parchment paper and lightly grease with cooking spray. Pour in the banana bread mixture.
- STEP 5. Thinly slice half of a banana and top the banana bread with it, making a straight long line.
- STEP 6. Bake for 40 minutes, until gancienten.
